Add nothing to the meat. No sauce, onions, egg, breadcrumbs.

Coat both sides with olive oil, salt and pepper.

Sprinkle garlic powder on one side, onion powder on the other.

Simple and easy. Delicious as well.

If you have good meat, you don't need these things.

The only time I had bison, it was gamey as hell. So you might want to add something to that meat.

And chewy. I had a steak in NM and it tasted fine just extra chewing and stringy connective tissues.

For your burger try cast iron skillet on a grill. You get the best of both worlds. e.g. HOT ICE

For meatballs yeah, maybe. For a burger? GTFO.

quality ground beef seasoned w/ salt, pepper, garlic powder
mix and form into loose (not dense) patties
season outside with garlic salt and fresh cracked black
cook in cast iron skillet over high/med high heat
- flip when burger is cooked half way up
- when other side is cooked halfway up add slice of sharp cheddar (or cheese of your choice) to the top of burger, add pat of butter to the skillet and cover with lid to steam. remove when cheese is completely melted.
*this should cook your burger to a nice medium.

Light grill for ambiance. Form patty from meat of choice. Eat patty. Turn of grill. I call it the Gaston.
