I prefer hoppy beers with spicy food, so a good IPA or double IPA would be great.

since you're in Texas, buy local. We have some great locally made IPAs

I actually went to the St Arnold brewery 2 weeks ago and that's. One reason I'm getting into the craft beer thing.... I'm going to have to start a list with all these suggestions

Try Southern Star's Pine Belt Pale Ale or Pro-Am, or Karbach's Hopodillo or Rodeo Clown with your gumbo.

there are several breweries open in the Houston area and more on the way

Ruination with a gumbo? Not so sure about that one.. talk about clash of flavors I'm no expert but it seems like a night, light beer would go well with something hot.

Insanity. I find it far easier to pair beer with food than wine.

it's certainly not as popular as pairing wine with food, but catching on. Probably mostly due to the incredible variety of craft beers out there.
