I was raised on red oak and hickory, still have a place in my heart especially on large smokes, or in smokehouses. Pecan for backyard type smokes..

Balls, you should get your hands on some China Ball and try it on beef ribs with a little bit of Tony's. The flavor you get is indescribable.

If you are speaking of pork ribs my favorite is cherry, followed by peach, apple or a mix. Brisket would be hickory, oak, pecan with no specific preference.

ETA - I agree with Gris Gris, not a fan of mesquite especially for pork.

Brisket - oak
Ribs/Pork - pecan
Chicken - pecan

Mesquite is good to grill burgers, chicken breasts, etc but is not user-friendly for long smokes.

Just my preferences.
