What to do with leftover Italian sausage?

I have about 1-1.5 lbs of ground Italian sausage leftover from making meatballs a few weeks ago. Its raw and in the freezer, but I want to do something with it. I thought about thawing it and stuffing a couple chicken breasts with it and some cheese.

Any other ideas?

I had some left over this weekend after using some night before on pizzas. I cooked it down with some onion, red pepper flakes, pork stock and left over pizza sauce. Folded into that some cooked pasta (small shells) and grated over some parm.

Pretty damn fantastic.

Brown the sausage and add it the Whole Foods pizza kit.

Use it as the base for a kale (or swiss chard) & white bean soup. Chop onion, garlic, red bell pepper, a little carrot; saute until fragrant. Add the ital sausage, brown & break it up a bit into smallish chunks. Deglaze pan w/white wine, add broth or water, and coarsely chopped kale or chard. Season with a little sage & maybe a few scrapings of nutmeg. Cook until greens are tender, then add cooked cannellini beans. Salt to taste.

Pizza
Tomato meat sauce
Make a stuffing for bell peppers.
Get the multi colored sweet peppers, season the sausage if it needs it, add fresh grated romano, clean the peppers, stuff and bake. You can also add mozzarella if you want or maybe some fontina. I wouldn't overpower them with the last two cheeses, though. These are good apps.

I make a version of this fairly often. Very good.



1/2 pound Italian ground pork sausage $
1 onion, finely chopped $
1 clove garlic, minced $
3 14-oz. cans chicken broth $
1/2 cup white wine or chicken broth $
1 28-oz. can crushed tomatoes in tomato purée $
2 zucchini, quartered lengthwise and sliced $
2 carrots, peeled and diced $
3 stalks celery, diced $
1 green pepper, diced $
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 cup orzo pasta, uncooked
1/2 teaspoon salt $
1/2 teaspoon pepper
Make Sausage Gnocchi in 15 Min.

Preparation
Brown sausage in a Dutch oven over medium heat. Drain, leaving a small amount of drippings in pan. Add onion and garlic; cook just until tender. Add broth, wine or broth, vegetables and herbs; bring to a boil. Add uncooked pasta; reduce heat and simmer for 20 minutes, until vegetables and pasta are tender. Add salt and pepper to taste. Makes 6 to 8 servings.
