I see these at Sams/Costco all the time. No idea how to use them.

Braised to tenderize the connective tissue. Beautiful cut of meat that's fork tender.

Braise them with mire poix, wine, garlic, and beef stock. Strain and reserve the solids (seperate the cheeks from the veg), reduce the liquid, add back the veg and purée, strain again, finish with fresh herbs and butter, reintroduce the cheeks, serve over rice or mashed potatoes

Or braise with onion, garlic, chiles, and tomatoes. Make tacos

should have said remove the cheeks. Purée the mire poix and garlic to thicken the braising liquid further

There is a taco food truck by my office. The beef tounge and cheek are fantastic.

ETA:

The cheek is like a super tender roast.
