What sides to serve w/ a french dip?

The inlaws are coming to town tonight. Im making roast beef french dip poboys (a pic thread will happen when the meal is complete!!). What kind of side would you do with that? I have fries as a backup but im looking for something a little more out of the ordinary. Ideas?

Cole slaw, German style. It's simply slaw, white vinegar and cracked pepper

Something non-starchy/carby would be nice, since you already have bread. Sauteed sliced portobella mushrooms or maybe a mushroom and onion gratin? Or roasted brussel sprouts....

I like the mushroom idea. I might saute up some shrooms.

Saute with a little garlic & thyme, and deglaze the pan with a bit of red wine...nice and easy.

I like the mushrooms or roasted veggies ideas. A good slaw is a good idea, also. A marinated veggie salad would work. A cup 'o roasted veggie soup. A watermelon, tomato and onion salad or a tomato, onion and avocado salad would be good. I'd include a little fresh fruit with whatever for some fresh flavor on the light side. Could be by itself or very lightly tossed in some poppy seed dressing. Let it sit and the fruit juices with mix with the dressing. I did that a few weeks ago and it was really good refreshing with the meal. Sat it on a bed of fresh baby spinach and arugula.
