If you don't have an immersion circulator, I would try this; I used that recipe for awhile and it's really good. I've always thought pork tenderloin and lime worked really well together.

I butterflied one stuffed it with Teets jalapeño and green onion sausage and cream cheese. Wrap in bacon and grill. Top with BBQ sauce.

No shite, sous vide is far and away the best way to cook pork tenderloin.

stuffed with cream cheese and jalapeno, dry rub, wrapped in bacon then smoked. baste with bbq sauce

I like to butterfly it open until it's about 1/2" thick. Stuff it with boudin (I prefer Billeaud's), roll it up and smoke it for half an hour at 225, take it off and wrap it in a applewood bacon weave. Kick the smoker to 275-300 and baste it with a Tobasco Pepper Jelly/Tiger sauce glaze to finish.

eta: I rub the pork loin with Sweet Rub O' Mine.

Marinate in olive oil, soy sauce, garlic, sugar, ginger. Grill on high heat 10 to 15 min, cut heat and let sit in hot grill 5 min, slice serve with rice pilaf

Cut it into chunks - near enough to 1 1/2 inch square as possible. Toss with equal parts paprika, cumin, onion and garlic powder and a liberal hit of salt and black pepper. Rub the mix into the cubes and let the pork sit at room temperature for at least 30 minutes and up to 1 hour.

In a separate bowl, combine a tablespoon of lemon juice, a tablespoon of honey and a clove of minced garlic. Set aside.

In a large skillet over high heat, heat 1 tablespoon of the oil until just smoking. Add the meat in a single layer and cook without moving until deeply browned on one side, about 3 minutes. Using tongs, flip the pork and cook, turning occasionally, until cooked through and browned all over, another 2 to 3 minutes. Off the heat, pour the lemon juice-garlic mixture over the meat and toss to evenly coat, then transfer to a serving platter. Sprinkle oregano over the pork and drizzle with the remaining 1 tablespoon of oil. Serve with lemon wedges.

Garlic-Lime Grilled Pork Tenderloin Steaks

Recipe is from Cooks Illustrated, but you can access a free version at this link..

You cut the tenderloins in half, pound into steaks, crosshatch with a knife, and marinade in cilantro, lime, garlic, honey, etc. Has fish sauce, but you can sub soy sauce.

I've done it many times, and it is a crowd pleaser. Usually skip the mayo/sauce; just do the marinade and grill. It has great flavor cooked on gas grill or charcoal.

I started using this about three years ago, and have never cooked a tenderloin any other way since.

My cheating easy peasy way:


Marinate in:



Grill 6 minutes per side w/ the last side w/ the grill off.
