What else does my crawfish salad need?

I gots:

crawfish tails
bacon pieces
diced sweet pickles
grated cheddar
dressing recipe
love

I need an onion in there, but what kind? Anything else?

No lettuce. Just the straight dope, like chicken, potato or tuna salad. Makes a great side dish.

My crawfish salad contains:

crawfish tails
hard boiled eggs
finely diced red onion
diced Tabasco Hot & Sweet pickles
mayo
a dollop of mustard
a squirt of sriracha

Adjust seasoning to taste. Don't poo-poo the hard boiled eggs. It's delicious.

People love it.

(Make it ahead of time so it can chill and the flavors meld.)

no onion needed, IMO. What's the dressing recipe? it needs some acid; hot sauce, vinegar, lemon juice.. all would be good additions.

You think it needs hot sauce if the tails are already seasoned? Why no onions? Seems like it would work pretty well.

I think it needs some kind of acid and probably more seasoning than just the tails are going to give you. Unless you're already really spicy - did you season the tails after you boiled and peeled them?

well I hate raw white onions and red wouldn't be my choice in this. some green onions might work. maybe even some diced celery and some garlic-infused olive oil! man I love playing around with salad recipes.

OldSouth, I do serve it with crackers. It goes fast!

If you don't like the pickle addition, I've also made it without. I've used green onion when I haven't had red. I always make sure it is well seasoned (even if it's leftover boiled crawfish). You are adding other ingredients.

A little. Yeah, but I like the idea. I'll try it, as well as the tomatoes and eggs.

That's what I was thinking, but I see them included in a lot of salad recipes. I prefer white for other salads. Might try that instead.
