What do you think of this crawfish boil recipe?

I guess I shouldn't say recipe because I'm not listing the whole thing.

Anyway, long story short, my friend that has been boiling for many years and taught me how to boil, changed his recipe up a bit. Every boil I've had of his has been very good.

I'm doing a boil this weekend and this new one just seems like overkill.

After adding the garlic, onions, lemons etc to the pot of water, he's adding:

The standard 4.5lb bag of seasoning

+

An entire 8oz of the zatarain's liquid boil

+

An entire 8oz of the zatarain's garlic and onion concentrate liquid boil

Adding the two liquid boils seems like complete overkill to me, but he swore that he's been doing it a few weeks and its been a crowd pleaser.

What do you think of adding the two bottles of concentrate to the bag and other stuff? I've never worked with the liquid before.

If you're steaming, you're gonna need 16 more bottles of liquid and 14 more lbs of seasoning

Honestly I think the flavor all comes down to the soak. For the people who want to boil and serve immediately, you pretty much have to have that pot stocked with seasoning, or you could put small amounts and soak for a while.

At the end of the day, I can't stand salty crawfish.

He soaks for the standard 30ish minutes, depending on taste and whatnot.

I use 4.5 lb bag (10 Cups) & a 16 oz bottle to my 1st sack everytime... W some Salt & Cayenne to go along w the lemon juice, garlic, etc then let it soak 40 min. Winner

Everybody has a "best crawfish ever" recipe. My favorite boils are the ones that use the old school Zat bags of whole seasonings. I'd think the 2 concentrates may be a bit much but I'm sure people love it.

Have y'all ever tried just salt, cayenne, and liquid? That's what I grew up on and I can't even believe there're so many powders on the market. Do people just feel better about themselves since they don't physically pour the salt in from the cylinders? 4.5 lbs of powder is 4 lbs of salt, cayenne is the best flavored spice for crawfish...I just don't understand the need for premixes.

You also get garlic, onion, paprika and lemon oil from the premix. Those flavors > salt and cayenne alone.

Or you could just use real vegetables and lemons. Paprika does absolutely nothing flavor wise. It's simply in the premixes to add color. That's it.

Onions, garlic and lemons are good, my friends and I use them every time. That's low country to me though and makes everything else in the boil more tasty. Crawfish taste amazing with any of that IMHO. Just an opinion.

Way to cherry pick one ingredient listed to try to make a point.

There is nothing wrong with using the premix bag. It doesn't taste any worse than dumping in your own salt and pepper.

To answer the OP's question, two bottles will be fine. I used that on mother's day in only 6 gallons of water to boil just 10 pounds.

Came out great.

Soooo....what you are asking is why buy a bag/jar of premix for $3.50, pour it in the pot and be done, when I could just buy 4 boxes of salt, a container of cayenne, garlic powder, onion powder, paprika, lemon purée, clove, sugar, msg, and a few other "unknown" spices? Yeah....not really sure? Maybe cause I like to open the shite up and pour it in the pot and be done, and have it be the same every time. I'm not a chemist dammit!

All you need for good crayfish is just enough water at the bottom of the pot to create steam, and then enough Old Bay to cover.

Embarrassing I have to teach you guys this.
