Just curious what you fry your turkey in. A 30qt turkey pot, Cajun fryer, electric fryer or something else.

Have both a pot and one of those oilless propane fryers.
I like using the oil, but damn its expensive and a pita.
The oil less fryer is just to easy.

Rather than start another thread, I'm frying an 18.5# bird, as opposed to my usual 13-14# bird. Should I reduce the oil temperature? And can I still guess about 3 min/#, or will it add significantly to the time?
As to OP, I use my smallest (40 quart) crawfish pot. I like having a little more freeboard.

No. And I would still estimate 3 mins per lb.

I've fried birds bigger than that. No problem. Don't change anything on the formula. (Although I do 3.5 minutes per pound) ... be warned, though ... you might lose your wings. Once you go that big of a bird, it takes so long to fry it, the wings are cracklin by the time the rest of the turkey is done.
