What's the magic of using them for Mexican cooking? I imagine they must be okay, even for the non-adventurous diner. Cheek meat is muscle, not organs, unless you're including the salivary glands.

Closer to something like short ribs, than steak.

Pot roast or brisket I suppose...but when it's cooked down, real barbacoa has a different texture.

correct. More of a oxtail meat/pot roast/short ribs texture. More delicate and tender than steak, and a deeper and richer flavor.

I had a Cabeza taco a couple of weeks ago without knowing Cabeza means "head." I thought it was brisket, so the descriptions of brisket and short ribs is accurate, imho. They were very good btw, much better than the asada tacos I had.

Go for it if you have the chance.

Try beef tongue. It's the best part of the cow.
