I wandered over to memory lane today and cooked Salmon croquets, purple hull peas and Mexicorn. Haven't had this meal since maybe 1960.

Mom would make salmon croquets out of canned salmon, when she could work it into the food budget, which wasn't often. There were six of us, so I'm not all that sure how she did it with one can of salmon and I can't ever remember her buying two. I do remember we thought we had hit the big time whenever she made them for supper. Same with the canned (Green Giant)mexicorn, which I remember as having many more red and green pieces in it back then.

My secret is that I made my croquets out of fresh (not canned) Pacific wild caught fillets. Taste was nice and the wife said not one negative thing about my kitchen fun.

May try tuna salad with fresh tuna fillets tomorrow.

I wish I had made some Sour cream with dill for my croquets. Had both ingredients to do that, but never considered doing it.

Grilled pork chops with Tajin(cilantro and lime)seasoning, stuffing and mixed vegetables. They loved it! Lol......

We did roast beef debris poboys. They were fair. The au jus was a little salty.

Charcoal grilled some fajita marinated skirt steak, used it to make enchiladas topped with leftover spicy sirloin chili and cheese. Black beans and turmeric rice.
