Yes, Amandine is made with almonds. I'm not sure why that misspelling bugs me so much when I see it on menus. When I see Almondine, tartar or tar-tar, osso bucco, and other botches I want to slap the chef.

I think I've mentioned this before, but it's worth many mentions. I went to a restaurant which had the specials listed on a chalk board in the lobby. One of them was "duck cells". It was interesting to ask the waiter what those were.

They were very good. Very tender in a fraction of the time. They're one of my favorite things to cook in the IP.

What's the crust Darla?

I put half a brisket and a chuckroast through the grinder twice, made two big, thick patties, salted the bottom of my cast iron and seared them to just before medium, hunk of cheese, bun on top and a lid to steam it.

Butter lettuce, Blue Plate Mayo, a sliced Cherokee purple tomato from my garden and pickles from it too.

Red Lasoda potatos I dug up Saturday simmered until just done, mashed a bit with butter, sea salt and pepper.

Best dinner I've had in a week.
