How important it a meat thermometer on a reverse seat ribeye?
Also how terrible is it that someone doesn't own one? Don't think I've ever owned one, but recently there have been a couple times I could have used one.

Haha! I'm so terrible about recipes.
I browned two pounds of ground beef, four cloves of garlic, just a small amount of diced onion, 4 Tbsp of Penzeys Chili 9000 seasoning (I'd planned on using my own spices, but I was low on medium hot chili powder). One can of tomato sauce, 1 cup of beef stock, simmer for a couple of hours. Then split it into two pots so my husband could have beans in his.
At some point I also added some water. And salt. The seasoning blend doesn't have salt, so add your own.
Here's the ingredient list for the seasoning blend:
Ancho chili pepper, cumin, garlic, cilantro, onion, paprika, cayenne pepper, lemon peel, Mexican oregano, black pepper, cocoa powder, citric acid, turmeric, cinnamon, coriander, ginger, natural smoke flavoring, fenugreek, cloves, fennel, nutmeg, white pepper, anise seed, jalapeno pepper, star anise and cardamom.
I really do chili several different ways. This was tonight's version.
