Shrimp salads...iceberg,shrimp, boiled egg, capers, red onion, Wowee Sauce, and black pepper...with a few saltines.

I microwaved the cauliflower until it was soft, added a little heavy cream and seasoning and mashed (but it's not completely smooth). Then I added a few spoons full of pesto that I made last night till it looked and tasted good. Sorry, but some things I do just by feel. Or taste.

Or did you want the pesto recipe? At least I followed one for that (with a few tweaks).

I only used one avocado because the reviews said the recipe was too gloppy and needed less. I also added more lemon juice (an extra tablespoon or so) and more olive oil to thin it out.
