Cork, dinner looks extra good tonight.

I can't decide between leftover meat loaf or leftover chili. Or shrimp salad (from Champagne's Market) with pork rinds instead of crackers. So many decisions.

Trying a slow cooker Mongolian Beef recipe I got off of Facebook (one of those quick fix videos). I'm not a huge fan of slow cooker meals but figured I'd give it try; smells good so far.

Meat loaf and cauliflower mashed faux potatoes. (Because it sounded so good when ya made it the other night)

Plus, I feel great the next day when I wake up after this meal.

Curried eggplant and sweet potato. Added a scoop of Greek yogurt after the pic and served over rice.

My choice ended up being a fried, smothered quail I found leftover from Friday night. Was good.
