Found out Cochon Butcher now sells their andouille art the local Rouse's. Score!

Smoked chicken and brisket with rice dressing and corn. Should be done in another hour or two.

Just cut off a couple pieces to try uncooked. I think it has a great flavor.

It's been a few years since I used it in gumbo. Gave it an odd off putting taste. Tried it again and the same thing resulted. I couldn't figure out what it was.

Maybe that was it. Hard to describe it, but it was not a flavor I liked. I know it has to be some seasoning they use. Might be better grilled, but not for use in gumbo.

I had half a banana cream pie from Lees for lunch so I'm flying the couch around 32,000 feet. Having bananas foster for dinner with rocky road ice cream.

I had redfish and shrimp courtbouillion for breakfast.


Long week coming up so I'm eating light.

Yup. Its not a smoked andouille... And for that I didnt care much for it. Pretty bland, IMO. Not what Im lookin for in andouille, same with their boudin. Rest of their groceries are A+

What are you getting busy on, Otis?

My MIL is here and cooked a lot of chili earlier. She dropped a few wieners in it to marinate a while. I fried fish and shrimp last night and ended up drinking my college football sorrows away in lieu of eating. I've also got a heaping helping of brisket and smoked wings from Friday that needs to be eaten.

I'm most likely going to eat a few wings and make a frito and frank pie after I finish these beers. The brisket can go on a biscuit in the morning on my way out.

Braised short ribs with the gravy over mashed potatoes and roasted green beans on the side. Wine of some sort.
