Three egg omelette with jalapeño pork sausage, diced leftover pork chop, red bell pepper, onion, mushroom, tomato, spinach, and cheddar. Cleaning up some leftovers. Parmesan grits and some whole grain toast.

Leftover brisket, roasted brussel sprouts, and mexican street corn.

Made a delicious chicken salad from leftover chicken last night, but I think I'm going to save it for lunches.

Now that I think about it, I'm going to shred the brisket and made a sandwich.

Oh yes, I really liked the idea. I cut the cubes I made into the meat off (so I had little brisket cubes) and tossed them with the herbs and olive oil. I'd definitely advise going easy on the oil. I put a little too much and I could taste the oil over the herbs. But if you make it more like a paste, it is fantastic.

You might even cut the olive oil with a big of melted butter so bring down the EVOO taste.

Also, probably better with Prime Rib.. as my brisket cooked as long as I did didn't produce much in the ways of meat juices.
