Dirty rice stuffed bell peppers and garlic parm French bread.

Going to use my new foodsaver to freeze the leftover dirty rice, been eating on it since Friday.

Like someone said, you'll never go back to regular grilled corn.

I cut mine off the cob then mix everything.

I was really hoping I had some.

All I have is 6 eggs and the roadwork makes coming back to my house impossible. The only restaurants that near me and unaffected by the roadwork are Inga's and whatever chinese place is next to it.

I mixed mayo with chipotle chili powder, garlic salt, black pepper, and some finely chopped up cilantro. grilled the corn to get some nice char marks, then covered it with that mixture and topped with some freshly grated cotija.

Looks good, TH. Mex street corn is the jam.

This is the recipe I used: Serious Eats

I used feta instead of cotija.

looks similar to what I used. I added the cilantro obviously because for some reason this recipe didn't have it.

it was so fricking good.
