Finally decided on some crawfish fettuccine I had frozen from a few weeks ago. It's defrosting now.

I just claimed my free 1 topping pizza from papa johns for picking the coin toss correctly. I got the spicy Italian sausage.

It was great. The rest will be lunch tomorrow.

OTIS & glass (y'all are too kind)

I browned some ground beef and some Harold's dressing mix along with a half container of Guidry's chopped veg and a couple of diced carrots. And seasoned it all. Oh, there was some chicken stock at some point. Before stuffing (the four parboiled peppers), I threw in grated cheddar, mozz, and parmesan. Toppped with bread crumbs and more parmesan. Pine nuts in there somewhere.

Who am I kidding? This might be low carb, but low fat it ain't!

It's a serviceable meal, nothing else.

Well, they look tasty, Darla.

I stopped parboiling the peppers for stuffed peppers some time ago. I found that they cook enough for my taste in the oven and they were much easier to stuff and deal with. Oh, and one less pot to wash. Well worth it.
