Hmm..I'd like to see that recipe. What I had the last time I was there was a bowl of oil with some beautiful shrimp which had zero flavor. There were a few flecks of pepper and a little seasoning, but not enough to provide any flavor. Very disappointing. I just don't remember them being so oily.

You know about the road to hell and good intentions? Well, I was dutifully peeling leftover boiled crawfish, putting the tails in a bowl, harvesting fat and adding that, too. Keeping my hands extra clean because all of the crawfish was going to a dish for someone else.

And then I had to taste one. Ooh, and the fat in that head ... and ooh, one more, and maybe one more, and look how good THAT one looks.

*burp*

So much for that ziploc back of whole crawfish. And the tails and fat that I reserved and put in the bowl? GREAT mixed with the quinoa I was making for something else. You would be amazed by how good those two go together.

And now I'm sleepy and I have a headache. I hope my husband likes the stuffed peppers I put in the oven.

Mine wasn't at all. Almost a thick broth. Again, this recipe didn't look much like what you posted. I could email you the pic I have but I don't know how to post it on here while I'm on my phone

Hard to read here, but on a phone or ipad, you can enlarge it to see the amounts. This looks much more like the BBQ shrimp I remember from there and not like the latest version I had there.

Thanks for sharing. I wonder what year that book is.

I have no clue. I will try and find out. The recipe was great and I highly recommend it. I guess he got the book while he was down there in culinary school. He works in Charlotte now.

Nice. My cousin also instructed me to add a little half and half and crushed red pepper and a bit more onions and pepper, which I did. I seasoned pretty heavily as well.

That's interesting. I don't think I've ever seen a bbq shrimp recipe with a half and half or any other similar dairy product.

Yeah, I can be heavy handed on the seasonings, myself.

It was only a dash, not even enough to make a difference IMO, but since he is the chef, I listened
I think he does it to maybe thicken it up just a touch.

I'm pretty sure we had the dish as an app at NOLA several years back and there was a little dairy in the sauce.
