Box smoker is up and running after a small glitch. I haven't used it in a while and had it covered up. When I removed the cover there was a wasp/hornet's nest started. After a few minutes, a couple of them returned, confused and not the least bit happy. I had to make a trip to the store for bug spray. lol
Chicken quarters marinated in jerk seasoning overnight, sausages from Rouses including pineapple chicken and maple pork. Hickory and apple wood chips.
I also made a spicy Creole shrimp dip from the book Acadiana Table.

Came out real good. Splashed some Louisiana hot sauce on top after the pic. Good stuff.

We have a 10 bone pork loin that I brined overnight, rubbed with kosher salt, cracked black pepper, rosemary and thyme.
Smoked at 225 degrees until 140 degrees internal. Served with garlic mashed potatoes, and fresh green beans.

Friend just called and said he was bringing me some boiled crawfish. Gonna chase those with some bourbon and the 6 reeses eggs I bought this morning.

Of all the food I have for leftovers in the fridge, I decided to bake a dozen Mrs Paula's fish sticks and warm up some boiled sausage from yesterday's crawfish boil.
