Uses for ham shank.

I have a leftover smoked ham shank with a good bit of meat attached. My plan was to soak some red or white beans for Monday. Any other options.

Just took care of my leftover ham shank. Made a ham stock in my pressure cooker and used the stock for split pea soup.

Came out awesome.

Makes a great stock. I do a vegetable soup with the stock, adding the leftover ham pieces about 30 minutes before serving. Homemade cornbread completes the meal.

If you ever eat red beans at Smilies on Jefferson they have baked ham shanks that are really good in lieu of sausage.
