Truffle Oil questions

Is there a good place online to buy truffle oil? And is there a particular brand that anyone recommends? Should I get white, black etc?

Any recommendations would be helpful. Was going to try and replicate some truffle fries me and the SO had not too long ago. I think she could have ate her weight in potatoes had they kept bringing them. I also figured I could use it in a lot more dishes if I kept it in the kitchen.

We're going again tonight so I'm going to see if the waiter or manager might give me some insight as to how to prepare.

Its really terrible stuff. Most of it is made from a chemical compound which mimics truffle aroma and not actual truffle. Avoid it at all costs. You can find jarred truffles and preserved truffles pretty easily.

There is also a fantastic truffled salt LINK that is pretty good. Especially on fries, where you want salt and not oil to preserve their crisp.

I did not know this. Any way to tell for sure? I'm going to order that salt I think. That looks like that would be fun to use sometimes as well.

Pretty much any commercially, readily available truffle oil is going to be made with chemicals and not truffles.

If you go through like a Dartagnan or other luxury foods vendor you might be able to find some real truffles (but not in summer, although maybe). Or preserved truffles.

But just get the salt. Its pretty good, especially on hot fries.

I have several jars of that truffled salt. I also have the fennel and saffron salt. Same brand. I bought them at Central Market. Good stuff.

buy truffles from Amazon.

Take a couple of slivers and soak in Pecan oil.

Let sit for a month before using.

This makes the best truffle oil you will ever have.

My thought exactly. I leave the truffle in the bottle just to show it off like the worm.

I do warm the oil maybe to 150-175 F before adding it to the bottle.

Seems to pull more essence out that way.

You can get some good truffle oil if you look around. I have some from Dean and Deluca and it is made by soaking white truffles. I buy black truffles at Whole Foods, by the cheese, soaked in oil. They are there now. Shave them over scrambled eggs or make a risotto and shave them into that.

Just read the label and make sure it isn't fake.

The oil only takes a few drops. I have the salt infused with black truffles. It's a very fine finishing salt and works well.

Check Dean and Deluca's website.

I like fake truffle oil on fries... It can overpower stuff if it's the fake kind but I don't mind on fries...Real truffle oil is very subtle and can ball a steak the frick out

I put it on the windowsill and shakes it a little every so many days. That's how my grandma would flavor oils. I do know people use a double boiler or hot plate.

Friend of mine gave me some this truffle oil from Rouse's, I think. I'm sure it's the cheap stuff that has a little piece of purported truffle in it floating around. Whatever it is, it tastes great tossed on popcorn and people eat it like crack.

Thanks everyone for the replies. I'm going to definitely get some salt and I am also for sure going to try Napoleon's idea and make some of my own oil. I'm going to also see if I can find some of the genuine stuff and not replicated knock offs.

And yes, I have watched chopped before but I am not pretentious like some of those asshats. I enjoy watching the show for ideas and such, but that's about it.

I'll probably be starting another thread in the coming weeks about favorite recipes that include truffles and truffle oil. I'm excited to add this little twist to some dishes and see if I end up finding some new favorites.

will that not make the pecan oil spoil? I've heard that pecan oil can go rancid if not refrigerated.
