Tomato Basil Bisque question

I'm doing one this weekend and my recipe is similar to the one Gris Gris does, except I add a little 1/2 and 1/2 to mine. Thinking about adding a splash of sherry in it, do you think this would be good in there?

You can add both of those to the roasted tomato basil that I make or use a different standard tomato basil recipe which includes the dairy and/or sherry. You can reduce the liquid a bit in the recipe and then add the 1/2 and 1/2 instead of that and if it's too thick, add more liquid. Tomato basil soups do not require exactness.
