Tips for eating a rare hamburger.

- Don't dress it too much. Mayo makes a pink froth with the meat juice and tomatoes don't help.

- Flip it over when you get it. There's only so much juice the bottom bun can take.

- Cut it in half. You don't want to wait to get to the center, eat that part of each half while you're good and hungry.

- Make it a cheeseburger. Stinkier the better.



I've been ordering my burgers rare, where available, for a while now and they are really good usually. I can usually tell by the waitress' expression whether it's a good idea or not. If I get the 'you're crazy' look I just say nevermind and order something else. If they seem unphased I roll with it.

Crusty on the outside, red in the inside = all right by me.

Dress it minimally. A toasted bun is an absolute necessity. Pile of fries underneath to soak up the drippings is a great idea.

The beef has to be freshly ground, and a really good cut.

Salt and pepper, not overly handled.

I think that's it. Sear it like Schwartz mentioned.

Pretty much zero chance of getting sick from ground beef if you're buying it at a decent place.

Yep. I might like a medium rare steak, but I like my burgers done. Too many surfaces that can come in contact with bacteria and won't necessarily be killed off if the inside is rare.

I work for one of the largest beef producers in the world. We have the best food safety protocols in the industry. We employ the best food scientists on the planet. All of them, to the man say this is a turrible idea. Ecoli is a surface bacteria. When you cook a steak, it gets killed as soon as it hits the heat. When it gets ground up, the bacteria is introduced through out. If your ground meat doesn't reach an internal temp of 165, you are taking your life into your hands. Ecoli isn't like Salmonella... You're not going to have the shits for a day or two and go on your way. You're looking at possible neurological damage, paralysis, or death. It's a bad motha! Cook your burgers through!

Tomatoes might have e.coli all over em. Hell, some Mexican may have smuggled little bags of cocaine in the tomato, now he'll be after your arse for his stash.

Eating a rare burger just makes me a little nervous. I eat steaks anywhere from blue to rare, but the potential for things to go catastrophically wrong with burgers just makes me wary.

Not even. I did have one beef tartare dish in Paris where it looked like they put my steak in a food processor with some mustard. It was way too frothy and had no texture left. I cried a tear of joy when I got down the last bite, but still I had to try it.

I love raw beef. I'd eat a filet completely raw if it wouldn't gross everyone else out. Blue rare is fine, but I'll always get it raw if I can. Tartare or carpaccio are the two ways it's usually served.
