Tiger meat

Went on a hunting trip to North Dakota and had some stuff they called tiger meat it came from a local meat/butcher shop up there and they couldn't believe with all the crazy stuff we eat in Louisiana we have never heard of tiger meat. I was almost the flavor of hog head cheese. They said it was raw hamburger meat and a bunch of spices.. It was served cold with saltine crackers. It was very good with a pendleton whisky and coke.. Also something they were surprised I have never had or heard of. Anyone ever heard of tiger meat?

I've heard of something like that, although it was not called Tiger Meat. I will say that I would not/will not eat raw ground meat. I think it was a german dish, but I could be wrong on that. I'll eat a medium burger at home if I personally grind the meat, but that's about as far I will go with ground meat.

Tartare is finely minced/diced cuts of meat that is mixed with various spices and herbs. Ground meat is put through a grinder. If whomever grinds the meat does completely sanitize the grinder after each use, or lets the meat sit in a display case/fridge for an extended amount of time then you'll get food poisoning, which is why I just don't trust it. I own a grinder myself and it's a bitch to clean throughly, and I doubt the guy at your local butcher shop is as careful as I after each use. Plenty of people on this board will order medium rare burgers at restaurants, and more power to them, but I just don't trust it.

I lived in wyoming for some time and i never heard of that. The only new dishes that were introduced to me were mountain oysters and minuto, neither of which were consumed.

Yeah, there's no way the person who's livelyhood depends on him not poisoning people and that has been trained in this PROfession is anywhere near as knowledgable and careful as you are.

Considering the vast majority of people buy there groceries at a Walmart, Kroger, etc., and if you cook the ground meat there is no issue, yea I don't trust those employees to maintain sanitation levels for safe raw consumption. They get to hide behind the "safe cooking" temps FDA standards. I'm not arguing that they don't maintain perfectly good standards regarding beef (or other meats) when cooked to standard recommended temps, but no way in hell am I trusting them to the extent that I would eat raw ground beef.
