Things to do with etouffe (other than w/rice)

Crawfish, crab or shrimp:

On fried, grilled or broiled fish
In tortillas, ala enchiladas
On an omelet
On a poached egg & biscuit

This is gluttony, pure gluttony.

(I haven't actually tried this yet, but my husband keeps wanting to combine these because they are two of his favorite things!)

I make it with chicken and sausage and serve it in pie crusts like a crawfish pie is served. Also good over pasta or as a dip for a turkey and Swiss sandwich.

We used to make it with leftover turkey and sausage on Christmas Day, my wife's family used to have the big meal on Christmas Eve. We called it Etouffe Noel and it was more popular than the turkey dinner the night before.

I like it over rice or grits and that's it. I make a crawfish pie filling, which is similar for pie shells and puff pastry.

I don't like it over proteins like meat etc... It sort of grosses me out to see that and the flavor overpowers the protein.
