I have enjoyed Sammy's on occasion. Never had Walk-Ons. Also, the "eaux" thing usually doesn't bother me, but I find " Bistreaux" to be fraking annoying.
I know I've contributed nothing to this thread, but I did grow up in Zachary, so there's that.

The food at Walk-ons is horrid.
I still have nightmares about my over cooked chicken sandwich and lukewarm fries.

The guy who bought Jack out has plenty of money to burn! And all they are doing is building up the brand to start franchising later this year. Didnt they hire some chef from Jubans to fix the horrible food? Is it still bad? I don't eat there...

It takes more than an exec to right the ship, and if they're looking to chain this thing to death, that's like hiring an astronaut to manage a go cart track. I have no idea just how bad it is in the back, but I'd imagine they are not geared to doing anything but very simple tasks. Places like that don't usually focus much attention or money to paying for that kind of staff. The attention is all on the TVs, the eye candy, and the front, and if that's the level of expectation their base expects, it's cruise control.
The catch 22 pure business people get in is they look at their current condition and can't get their minds around their food costs eating them alive, and so think labor is where they need to cut, and getting out from under that cycle is difficult to do, and not even remotely on their minds if they're looking to brand this thing for chains. You can hire John Besh himself and it wouldn't matter. That's not the goal.

Never been but I know enough not to order a chicken sandwich from a place like this. Of course it will be dry and over cooked. Out of everything on the lengthy menu, that was probably not the best choice.

Overstatement. I've only eaten at the one in the CBD in N.O. They have a couple of salads that are okay for lunch. And a sandwich or two. If you expect more than bar food, then you're holding it to an unrealistic standard. To be clear, I don't think it's a good restaurant, but it'll do in a pinch.

I've eaten there 3 times in the past year. It's never been my pick, because there are other places I'd rather go. But each time I've gone, I've had a satisfactory meal. There are enough salads, sandwiches and wraps on the menu that are just fine. It's somewhere you can take the kids in a pinch as well. If they'd upgrade the beer menu a bit, I might go more often.

But don't you think the whole term "bar food" is set by what people expect from their experiences with it locally, and can't that change when the said "bar food" is much higher quality, and then it becomes the standard rather than the sub par bar food that was once the acceptable standard to meet?
I think Walk On's is about what people expect, but I suppose what I'm asking is can't that be easily bested and then it becomes the standard to meet?

The place prints money, I'm pretty sure the food quality is right where it needs to be from a business standpoint.
