Had some frozen speckled trout that I defrosted and cooked most of Saturday night. It was a bit more than I wanted to cook then, so I have a few pieces left that I've just kept in the fridge till then (actually, they are sitting in a pie plate in an egg wash).

Will I be able to cook them tonight and live? I haven't smelled them. Will they smell too awful this evening to cook up?

It's fine. I have a similar thing going on, minus the egg wash. Was given a mess of fresh redfish and trout on Friday. Ate the redfish thru the weekend. Will fry the trout tonite.

I go until the smell test fails.... If it smells like nothing = fresh, a little fishy is OK.... very fish or discolored, please trash it for your own safety

1 day - no problem
2 days - still okay, try not to wait longer
3 days - make sure it smells ok and use it now
4 days - nope, 3 days was pushing it

I had some bass that was caught last Saturday in the fridge until this Saturday and I fried it and it was fine.

It was in a Ziploc and not egg wash, but I can't see that making a big difference.

I keep all my fresh fish in the fridge in a bowl topped with ice for up to a week before I freeze.

I have this going on right with some white perch and a goujon now because plans changed. I just changed out the ice this morning. There was still some left from Sunday. Fingers crosses.

Did you cook them? Are you dead?

Fish sitting in eggs are two volatile substances that can go south fast. Hope it worked out and it tasted alright. Pretty neat science project.

i have kept some on ice like that for over 2 weeks before it started to smell fishy. Look you go to the grocery or seafood market, more often that not that fish was caught a week prior, just kept on ice.

So just in the fridge isnt cool enough you need it on ice. either in icechest or fridge.

Yes

I don't appear to be.

You pretty much encapsulated my concern. I was making Paul Prudhomme's trout pecan menuiere Saturday night and realized I was in the process of dredging way too much fish, so I just kept six pieces in the egg wash. They didn't smell too bad Monday night, so I squirted some mustard on them, dredged in fish fry and fried them up to enjoy the baseball game. Amazingly, neither made me or my family sick.

Thanks for the advice all.

Thinking of that always makes me feel better.
