The ribs at Rouses are Vacumn packed. Then taken out of the wrap and put in the display case.

Some beef, pork and poultry is vacumn packed, refrigerated and shipped. Some is frozen then shipped. I'm guessing no one on this board can tell the difference, me included.

This was my point. The cryovac/vacuum sealed 3 pack of BB's at Sams are fresh/not frozen, in my mind. Although you are correct I/we would probably not know the difference. Not a big deal either way actually.

How long will they keep if frozen? No freezer burn, just 2 years old.

This.

Most butcher shops who have bone in meat keep the ribs on the bone-in pork loins to make bone in chops, standing rib roasts, crown roasts, etc. Then they supplement with vacuum packed ribs. Some might bone-out the loins to get baby backs, but you only get 2 racks per hog.
