Thanksgiving Day Menu

Some may not have completely decided yet so I thought I'd start this so that some may share their ideas and help others with their menus. Sometimes it helps to see what others are thinking about cooking for the big day.

What's on your Thanksgiving Day menu?

First year that I'm not doing a turkey. We have gumbo, potato salad, Mac n cheese, I'm sure a vegetable somewhere in there and then desserts. I'm not on dessert duty so I'll just eat whatever is brought

The only 2 things that matter are fried turkey and oyster pie. As long as I get those 2 (and I will) all is right with the world

My brother in law is putting a small turkey on the rotisserie, it will jelust be four of us.
Not sure what else there will be, I am making cream of Brie and crabmeat soup, I'm sure there will be
mashed potatoes, dressing of some sort, creamed onions.

Interested to see what people are making. Starting a new tradition this year where we cook instead of traveling and my menu is wide open.

I am going to smoke a 12 pound turkey. I'm going to smoke a whole duck. And I'm going to cook a ham in the oven. I'm also going to smoke a 5 cheese Mac n cheese (yes this is absolutely phenomenal).

Green bean casserole. Cornbread dressing.

Will also smoke some bacon and sausage to munch on throughout the day.

We are all leaving town on Fri morning, so it's gonna be simple this year: seafood gumbo, potato salad, homemade petits pains (little mushroom shaped rolls), and some kinda dessert.

Is oyster pie the same thing as oyster dressing? My mom wants oyster pie and I can't find many recipes.

Well, usually we have our menu set but this year my oldest daughter goes in the hospital to deliver our second beautiful granddaughter on Wednesday(as of right now)and so we are postponing our Thanksgiving Day meal until next Sunday when she will be out of the hospital ad able to get around a lil better.
One thing requested for sure is to have our turkey slow roasted overnight. Comes out absolutely fantastic and makes the whole house smell awesome.

What's the temp on a slow roasted turkey?

Rub turkey with butter. Wrap ends of legs and wings with aluminum foil to prevent burning while cooking.

Sprinkle salt, thyme, basil, and three peppers (black, red and white) onto turkey and rub in well.

Preheat oven to 500. Place turkey in oven and cook at 500 until honey-colored (10-20 minutes). Leave uncovered.

Lower heat to 200 and cook 40-50 minutes per pound. Baste occasionally.

Note: Do NOT stuff this turkey, due to low cooking temperature. Cook dressing separately.

Roasting a 55lb pig, turkey roasted in the egg, turkey in the oil less fryer. Traditional sides - oyster dressing, sweet potato casserole, baked macaroni, pecan pie.....

Zaater Bread (manouche)
Arabic Rice (Hashweh)
Turkey
Ham
Kanafeh

I plan on trying this Hasselback Potato Gratin recipe

Helped my mom prep some homemade pitas on the baking steel and form up the kibbeh for frying on Thursday.

In a similar situation. This year it will be just my wife and daughter for Thanksgiving. Not really sure what to do, but I'm already having serious withdraw symptoms from none of my regulars being cooked. Gonna Suck!!!

Needing ideas....

My grandmother insists on doing majority of the cooking. The grandkids will go over to help set things up and lift the turkey for her.

Her menu:
Turkey (roasted)
Cornbread dressing
Oyster dressing
Sweet potatoes
Brown gravy
Mashed potatoes
Corn
Deviled eggs
Green beans
Three bean salad
Tomato pudding
Yeast rolls

Me, Mom, and my Aunt usually fix the pies:

Apple pie
Chocolate pie
Derby pie
German Chocolate Pie

Smoking 2 turkeys, a ham, cornbread dressing, shrimp fettuccini, rice dressing, smothered snap beans, baked spaghetti, slow-cooked chuck roast, smothered cabbage, pot of fresh white beans, brown-n-serve rolls


and Bourbon.

Usual pot-luck affair for us, with everyone bringing a thing or two. Still undecided on this years.

Last was the traditional green-bean casserole fired onion thingy ... but using sightly boiled fresh hairnets and adding fresh mushroom/evo/garlic gravy in addition to usual stuff. Wanted fresh water chestnuts, but damn hard to find here in Al, so none of them this time.

and

Carrot souffle (more casserole like) kind of reminiscent of one with sweet potatoes. Basic eggs, sugar, sour cream, butter and cinnamon taste. More light a bit brighter tasting than sweet potato.
