Had to wait until I got home to ask the wife. It is her sauce.

1/4 cup Lime juice
1/4 cup fish sauce
1/4 cup sugar
1/2 to 1 Tablespoon sriracha
1 teaspoon cilantro
1 teaspoon mint
1/4 cup finely grated carrot

Mixed cold and stirred until sugar dissolves, before adding carrots

Sriracha is a preference. Add as much as you like. The beautiful red comes from the sriracha as does the level of heat you desire. 1/2 Tablespoon Sriracha is not very hot.

The wife is the number one Thai cook in our house. She says the only thing difficult about cooking Thai is finding the ingredients in Meridian.

We do have a wonderful Thai restaurant in Meridian.

Takrai Thai Restaurant on North Hills Street at Highway 19.

Never had a dish there that wasn't wonderful.

I'm a fan of Thai food. It all looks delicious. I want some of that soup!

Darla, we had the same meal tonight made with the leftovers from last night. The soup was great since the chicken broth and chicken came together last night in the fridge.

The wife started the broth again and then added even more veggies than last night. I like the veggies in Tom Kha so I was happy with my bowl. I could eat this soup four times a month
