Tacos - do you put cheese on 'em?

Tacos:

Cheese or not?

I say no.

Carne Asada, salsa, sour cream, hot peppers, and cilantro. No cheese needed.

A little queso fresca is sometimes good. And I make a veggie taco I put feta on. But I NEVER put sour cream on a taco.

Cilantro and onion with a little lime. Preferably on a lengua or cabeza taco.

Got mild salsa for the 2 kids that don't like it too hot. Having said that, that brand of salsa has the hottest "mild" I've ever tried. I also make a spicy carne asada and top it with hot peppers. That taco had some bite.

In the end, tacos should taste good, whether they are spicy or not...

That "taco" picture is so maddening to me. Meat looks good, it's got cilantro, line lime and some type of salsa.


But the peppers and flour tortilla drive it straight into fajita territory

Mine vary, depending on the protein I'm using, but they often have cheese. Taco authenticity isn't important to me and although I appreciate street tacos, I don't make them at home.

Depends on what kind of taco obviously.


Crunchy with beef? Of course.
Some sort of more specialized soft taco? Not necessary.

Absolutely.

I normally like to add queso fresco or cojita to mine, but we didn't have any when we had tacos the other night, so I did one with shredded mozzarella and one with some Stonewall Kitchen queso.

Wife marinated skirt steak overnight and hand made the tortillas. And that's a fresh strawberry margarita behind them.
