Anyone have any good recipes for venison cutlets?

Salt/pepper sear. Or you could marinate and then sear. When I do I like .5 cup olive oil, 1/3 cup soy sauce, 1/4 cup red wine vinegar, a little mustard and worchestershire. Then salt/pepper sear. Most important thing is to not go past med. rare.
