Steaks on a Primo?

I'm gonna give it a whirl.

Fire box divider in, charcoal in one half only.

Cooking grate on that side in up-side down (to get the steaks near the coals).

Grate on the other side in "regular" with the extended grate on top.

Gonna sear both sides of the steaks fro about 4 mins, each side.

Then finish them off in indirect heat (like and oven). Not sure what the oven temp will be though so I will have to monitor and wing it.

Should I leave the top open when searing? How will I know the oven temp, if I do?

No, don't leave the top open. I do steaks on my primo probably once a week. Good luck. I love mine.

4 minutes per side @ 800+ degrees should pretty much do it. May over do it depending on thickness

Depending on the thickness of the steak and temp of the grill 4 mins per side may be too much.

Thanks guys, they turned out very good.

I did not get the temp up high enough. I closed the lid and had the dampers choked down about 1/2 way when I put them on.

There were some good grill marks but very little char. I would have liked more char.

Next time I know to leave the dampers wide open.

I remember one guy posting about doing steaks directly on the charcoal. I would like to try that out in my Primo one time.

ETA: I'm still learning the intricacies of the Primo. These were my first steaks.

Normally they make an order in the fall, I might be able to convince for a spring order. I have had a number of people express interest...

do this. Let it fly. don't worry about closing the dampers in order for it to cook like an oven.

at a high heat(600+ degrees) it will get a nice char and cook the steak all in one. No need for any extra

on my BGE, I sear at close to 700 as I can get. 1 minute per side, lid closed. Then shut all dampers and let steak sit for 4 minutes, no flipping. Pretty much medium rare for a 3/4"-1" steak.

I cooked steaks on my Primo yesterday. Could not get the temperature to rise above 400 on the temperature gauge. Used only one side, separated with firebox divider.

Using Western lump charcoal and had all vents wide open.

Not enough charcoal?

Check out the T-Rex method for cooking steaks on a BGE. The same should apply for a Primo. Makes a fantastic steak.

I lose every strand of hair on my hands when I do this method... Even if I "burp" it.
