St. Louis Style Ribs (With Pics)

Smoked some ribs for the game yesterday. Here goes:

4 racks spare ribs trimmed up St. Louis style.

Generous on the rub, let em sit out while the smoker heats up.

I used Royal Oak lump with 2:1 hickory to cherry wood chunks.

230ish and we're ready to roll.
[/URL][/img]
3 hours in time to wrap.

A little homemade sauce and orange blossom honey in the foil and the ribs are placed meat side down.

Pulled after 45 minutes. Vented for 10 minutes, then rewrapped and let rest for 30 minutes. Sliced em up, time to eat! Cheers!
