Speckled Trout Suggestions

I have some filets that I want to cook but not fry. I also want to keep it pretty simple and healthy. Anyone have some good ideas? TIA.

wrap in parchment paper and bake it? Throw some herbs, lemon, garlic in there.

Whatever seasoning you like (Cavender's is good but I'll use Tony's or the like too) and a hot non-stick skillet for a couple minutes a side. 5 minutes and it doesn't get easier or "healthier."

ETA: Keep you fish in a bag covered in ice in the fridge and they will last well over a week.

Could be too long, depends on the size of fish. Hit it with some lemon as soon as it come out of the pan.

This, but I prefer a blackening seasoning.

I've been using Paul Prudhomme's blackening seasoning a lot lately.

Kind of the same here. I'll do speck fillets in the oven from time to time, but fried specks might be my favorite meal.

My easy version of Trout Almondine.

Season the filets with a little flour and seasoning.
Cook them in butter in pan.
Remove fish and throw in some chopped almonds and let it simmer in the left over butter.
Top the trout with the almonds and remnants from pan.
So good.

I'm not in a position to post recipes but you can get ideas from the following:

amandine
pan fry real quick in butter
roll and butter poach
Parchment paper
Ceviche
smoked trout/trout dip
broiled
Grill in a fish basket

Next time, keep some fish whole and look at bossfloss's thread on peche's whole grilled fish

GW Fins parmesan crusted trout recipe is really solid. Not very healthy though.
