SO I want to make some extra crispy, crunchy, golden brown fried shimps

I want to use
Fresh Shimps of course
Egg
Corn starch
Baking Soda
Panko
Seasoning
Whats your geaux too recipe and quantities ?
Say a 4 lb batch of 15's, butterflied
Arse is invited to taste test

In my experience use of egg doesn't yield crispy fried food.
Season some flour. Dredge shrimp in flour. Shake off excess. Dip quickly in cold water. Dredge in flour again and rough up surface with fingers to make flaky bits - that is the key. Fry in 375 degree oil. Drain on rack, not paper towels. Makes great fried shrimp.

I don't know about shrimp, but that method makes great ion rings.
