So I need a "WOW" NOLA meal rec for some serious "foodies"

My wife's uncles want me to give them a restaurant recommendation for NOLA and generally, I would be pretty decent at that, except these guys are true OT ballas and know good food. They regularly fly to Paris or NYC or wherever to have dinner and then fly back the next morning.
In other words, they are on a different level than myself and I'm struggling to think of a recommendation that would truly "wow" them.
Do I send them to one of the NOLA classics? I've been to Commanders and while the food was good and I'm sure they would love the setting, I'm not sure the food was good enough...
August? How innovative is it? Never been.
I've thought about Peche, even though I know its not really high end, which I don't think they care about, but I've never been.
So basically if you knew someone that had traveled the world eating at all the best restaurants and they asked you to send them to 1 restaurant in NOLA, where would you send them?
In other words, they are on a different level than myself and I'm struggling to think of a recommendation that would truly "wow" them.

If you're looking for something very 'innovative,' then Square Root.
August and Le Forest aren't as cutting edge, but top of line in terms of food.

If it's just about the food, then I think the tasting menu at August would have to be top choice.
If the experience can factor into it more, then Commanders.
You mentioned Peche. If they are used to going to worldly great restaurants, than the service and most likely food they get in N.O. probably will not meet their "expectations". This is where something like Pesch, Cochon, or maybe one of the neighborhood classics like Clancy's might work better for a different feel for them.

kinda where I'm leaning since I'm not sure any of the really new high end places will stand up, so maybe send them to a true NOLA classic

Chef's table at Commander's is a pretty high end deal for anybody and that would be my rec if you can get a table.
Square Root is on par with what is fairly trendy right now at some high end spots with the 15-20 small plate services, but it's not unique to NOLA.
August tasting menu would definitely be a nice meal.
Emeril's chef's table I've never done, but probably a fun experience.

Well the experience at Square Root is like $600 with the pairing, but unfortunately, because of that, I don't know anyone who has done it in order to say whether it is really as fantastic a meal as it seems. Lol.
Their Yelp page has tons of gorgeous photos though.

Send them to Peche. Square root is a low end copy of Ko or Brooklyn Fare and would not last in NYC. Peche is the real deal. Unique and just won a Beard award for best new restaurant. Also is Louisiana cuisine.
ETA - nothing in New Orleans can compete with the high end tasting menus of NYC, Paris or SF. Don't try to compete with that by sending them to Square Root, August, or wherever. Give them something interesting with Peche or maybe Cochon (prefer Peche). If they demand white table cloth, I would send them to August.

That would be my concern recommending this place.
They are only gonna eat one meal and fly right back out ? If that's the case Id go August.
