I had never heard of it as an appetizer til this past spring in san fran. it was surprisingly tasty. served with some kind of tomato jam and bread.

Yeah, every time I make a chicken stock for a gumbo I end up eating marrow which is what makes it taste good in my mouth.

Pappa's steakhouse in houston serves it up to top their steaks if you want it. Their filet with marrow is the best thing i've ever eaten besides boiled crawfish.

I've only eaten it once. At Besh Steakhouse and they served it in the bone. I didn't care for it. Would try it again somewhere else.
