Smoking Ribs For the First Time

This may be a dumb question, but I want to get this thing right. I'm using the 2-1-1 method, and I know the second step is wrapping the ribs in foil and using just heat. Does this mean I should take the smoke box off, or does the foil basically make the box irrelevant?

no sense in wasting your good wood (haha) while your ribs are wrapped in foil.

Whatever means you have to apply heat to the ribs at that point is sufficient.

I wouldn't even worry about smoke for the last hour


They've absorbed the smoke flavor they're gonna get

2-2-1, and yes, once you get past the first 2 hours, smoking is useless. You don't necessarily have to take the box out but the ribs will not gain anything from the smoke after the first 2hr step.

Those look fantastic. You know you are doing something right when the meat pulls back off the bone like that. Smoke ring looks nice too. Kudos to you on your first time. My first time I went dry rub the whole way but now I add a little BBQ sauce the last hour and find that I like wet ribs better than dry ribs, although the dry ribs were good. I also switched from mustard to vegetable oil as the rub binder and find that I like it better also.
