Smoked trout with pics-Weber kettle
First I brined my specked trout in kosher salt, brown sugar, peppercorns, cloves and bay leaves. About 3 hours


Next, I drained on a bakers rack and put back into fridge for 2 hours. This is supposed to help with a glaze.


Them I lit my fire (snake method style).


And put my fish on the kettle.


1/2 way through cooking


The final product:


I flaked some up and mixed with cream cheese, horseradish and pepper. It was a nice little dip. Ill snack on the rest of the jerky today.

It took about 4 hours on the smoker. I guess it's a 22" grill. Smoking a small butt today

Yep. I've been pricing green eggs all week and decided I'm content with my weber kettle. The snake method has opened new doors to me and I keep about $1200 in my pocket.

Only way I've ever been able to eat smoked fish is in a dip. I've tried it probably 20 times with all different kinds of fish and by itself the smoke flavor (regardless of wood) just overwhelms the fish. Dip is definitely the way to go.

Try a milder wood like apple or alder. I didn't here because I was out but the type of smoking wood makes a difference.

I've only ever used apple, cherry, or alder, would never even begin to throw something like hickory at fish.

Google charcoal snake method. It's pretty awesome. Basically you stack charcoal around the edge of the kettle against the wall and put lit coals on one end. Allows for a long slow burn on a kettle grill.
