There is a huge split in the fan community between oscillate and non oscillate.

I rode the fence for years.

I think it's more of a thing with the baby boomer generation. Lots of people our grandparent's and parent's age were skeptical, and rightly so, of the technology.

This is gonna be good in a spread, with crackers. The flavor is pretty rich. I may have been a little too generous with the old bay. Not a problem though.

I'm no expert but it looks like the fan time and oscillation was fan near spot on.

I gonna play around with the time and speed. Maybe 85° is too much, maybe it's not enough. Maybe I need to bring in more fan power next time.

It's still a work in progress. This batch is edible, but things could have gone south in a hurry.

I think an identical fan on the opposite side and oscillating the other way would produce the absolute best results.

That looks pretty good too though.

What do you mean by 85°?- I hope you cooked it to a higher temperature than that.

That's an older and little known technique that has almost been forgotten. Mostly used in southern Asia in the late 1800s. The records are a little sketchy as was the makeshift electricity at the time...
