I've done a variation of these for years but always used a 1/4 of a japeleno and shrimp. First time trying with the smokies and put a slice of pineapple inside a few of them to try something different. I don't have a smoker though so I always cook them on a grill.

Looking good.

Anyone ever tried these with cheese other than cream cheese? I don't care for cream cheese.

I have used some ricotta cheese and a pepper jack blend. Turned out well.

I have made these with a half slice of conecuh sausage. Also add a little smoked paprika to the cheese to add a little extra flavor.

I also make what we call pig candy, which is a 1.5" section of conecuh sausage wrapped in a thin piece of bacon. I mash the bacon into a mixture of brown sugar, cayenne pepper, and red pepper flakes before I wrap a half a piece around the sausage.

I prefer to cook it in the oven on a wire rack with foil lined cookie sheet because the sugar makes a mess of the grill.

try you some blackberry jam in some of them. The savory ones are good the sweet ones are awesome!

Also I found that toothpicks really help the bacon to stay wrapped.

AS promised, here are my results. These took much longer than expected to make. Glad I prepped Friday night.


Here are the jalapenos after I cut them in half and scooped all the insides out. Mine were much smaller than yours and I think they were the perfect size.



Here is the filling. I used a little more chili powder so it was much more orange than the OP.


Smokeys fit perfectly. I started just stuffing these with my hands and it went by much quicker than with the spoon.


Here they are each wrapped with a whole piece of bacon. Threw them on the smoker Saturday morning at about 7:30. Smoked them for about 2.5 hours at around 240. Peppers had the perfect crunch.


Final result. They were great and I will make again.

Nicely done! I would probably use more powder too and the peppers were better sized. Glad to hear you enjoyed

I'll shred some white american cheese to add to the filling sometimes, and switch up the inner protein with pulled pork or other sausages.

Finally made the Atomic Buffalo Turds tonight and holy shite they were good! Added a little Cayenne pepper, brown sugar, and used Maple bacon. It was awesome!
