Costco had their pork belly on sale today so I decided to smoke one to freeze. I like to smoke pork then freeze it in smaller portions in a food saver bag. Then you can drop them in boiling water and have a quick pork sandwich any night of the week.

Interesting. I haven't seen pork belly shredded like that before. I have never cooked it so I probably just haven't paid it enough attention.

Looks good though.

I've smoked a lot of pork bellys....none looked like that. That looks to be a pork butt.

If you would smoke it to 209 degrees and then shred it it would look just like that. Wouldn't taste like that one but it would look like it.
You can smoke an entire hog and shred it and it will look just like this.
Most people only use the shoulder for smoking because it is cheap and readily available.

Good deal and I agree with the look of shredding pork belly. Was that the New Orleans location by chance ?

It has more "white" meat than the shoulder and most of the fat renders away so you don't have those big globs of fat left over like a shoulder.
Since it is thin you can smoke one in about 7 hours.
I have not smoked a shoulder since Costco started selling the bellies.
You can also smoke to about 160 then glaze it and slice.

I don't know man. This looks very interesting to me. I might give it a try. Pork belly two ways. One shredded and one nice and crispy.

That's a hell of a deal. I'm gonna have to try that. I've got a butt going into a brine this morning.
So does it taste like shredded bacon??

Looks great! We regularly get the pork belly instead of a butt and Costco usually has the best deal in town on some nice belly. Usually, I will smoke it to about 180. Slice it thick across the grain. Glaze it and put it back in till it hits about 205. Meat candy heaven. I may have to shred the next one. That looks good!
