Ugh, it's Wednesday and I'm already sick of salads. Looking for entree ideas.

I did shrimp fajitas last night. Google Chili's shrimp fajitas copycat. Just some seasoning, peppers, onion, evoo and lime. Use corn tortillas instead of flour.

Appetizer: ceviche.

Entrée: Double skewer them up and baste in adobo sauce on the grill. Spicy and delicious.

Quinoa and roasted or grilled vegetables for a side.

Grilled with grilled veggies and maybe some roasted sweet potatoes. I prefer them bacon wrapped, though.

Are you low carbing or counting calories? I like to make crustless quiche. I've done a shrimp and mushroom and shrimp and asparagus.

So that's more of an idea than a recipe.

Can you eat rice on your diet? If not you could sub quinoa and make Kimchi Fried Rice (quinoa) w/ shrimp. Kimchi is incredible! You can buy it at Whole Foods. Add shrimp to the recipe and boom. If you want to kick it up a notch, mix in coarse chopped fresh mint, basil and cilantro on it before serving.

Head on shrimp. Baste in butter and thyme. Grill turning once.

Serve with homemade vinegar based slaw and sweet potatoes.

I'm doing the same thing. I was giving a shrimp and zucchini noodle recipe. Comes out great and simple.

I'll have to find it if interested as I'm on my phone on the road currently

I make Thai Chile Garlic Shrimp when I'm in the mood for shrimp. Serve over rice usually but it's perfect by itself.
I'll see if I can find my usual recipe

Made shrimp curry last night. Used low fat coconut milk. Served with a ginger, carrot, and green pea quinoa.

Smother down an onion, smother down some merlitons, add some shrimp.

Smothered Merlitons with Shrimp.
