I am boiling some crawfish here in Atlanta. Throwing in some sausage to make up for some of the people that will only eat a couple pounds. When would you toss the sausage in? Dont want it too spicy.
I was thinking after I cut the heat to soak

Yep. If it's smoked sausage, all you have to do is heat it up.

I usually throw mine in at soak time but if you don't want it spicy I would do it like 10min before you take them out the water.

Cheap location in Alpharetta might be a problem
I'll see what I can come up with.
They have a place here called Adeles in Roswell which is pretty good.
A place called Roux on Canton in Roswell, Ga that I havent tried yet. Both of those are in Roswell though.
I think a place in Alpharetta area would do well

The sausage won't get too spicy.

Go with regular smoked sausage and it'll come out a bit like regular hot sausage (spicy wise). The boiling will plump it up.

I prefer pork sausage to beef.
