Rotisserie Turkey and Brine

I always cook a Heritage Turkey on the rotisserie with a mix of lump coal and wood. Always turns out perfect but the brine is where I want to experiment a bit. I never add sugar to brine as I think it makes everything taste like ham - maybe I need to put something with the sugar and salt that will change that "ham" taste. Anyone have a good turkey brine secret they are willing to share?

You can add a wide variety of things to your brine to make it taste differently and will most definitely hide the sugar taste. Maybe some paprika for a little smokey flavor? Citrus always does well with turkey...cut up some oranges, lemons, limes etc, just whatever sounds good to you. Thyme and Rosemary are always good in there as well but don't get too carried away.

Paprika sounds like a plan - maybe a mix of smoked and sweet. You are right re rosemary - a little goes a long way in a brine.
