On the boards suggestion I reversed seared some steaks tonight.

What temperature did you cook the steaks, and for how long?

275 in the oven for 42 minutes and internal temp 125. Let them sit for 15 minutes than on hot grill. 50 seconds each side and ate immediately.

We do a similar process to this with all of our rare steaks in the restaurant. It's crucial to break down the tissue of the meat & melt the fat a bit for best flavor & texture.
